Pickled zucchini

INGREDIENTS FOR 6 PERSONS:

A kilo of zucchini,

4 cloves of garlic

5 leaves of sage,5 mint leaves,

1.5 dl of extra virgin olive oil,

1 dl white vinegar,

extra virgin olive oil for frying,

salt

HOW TO COOK:

Wash zucchini and cut into strips, fry in a pan with olive oil. After being dried, salt lightly. Arrange in a bowl. Prepare now the pickle. Pour the olive oil in a saucepan, add a pinch of salt, the leaves of sage and mint and cloves garlic crushed, then bring to a boil and let it fry the garlic briefly, however, until golden brown. Now add the vinegar and let simmer for few seconds. Pour over zucchini the hot pickle and let stand. Serve it cold. The scents of sage and mint make it enjoyed the dish.
