Winter pears in red wine

INGREDIENTS FOR 6 PERSONS:
1 kg of pears Martin Sec,
20 cloves,
2 cinnamon sticks,
200 gr. sugar,
1 lt. of Dolcetto d'Acqui.
HOW TO COOK:
Bring to boil Dolcetto with cloves, cinnamon and 150 gr. sugar. Immerse the pears Martine, well washed and dried, and cook over high heat for 45 minutes. Uncovering occasionally to check the level of the wine to completely cover the fruit. When cooked, remove the pears and put them on a platter, strain the sauce of wine with a colander and sprinkle the fruit (if it is the case, condense the wine and sugar until syrupy consistency before filtering and pour over pears). Finally, sprinkle with remaining sugar.
