Tajarin (egg pasta)

INGREDIENTS FOR 4 PERSONS:

500 g of sifted flour,

2 whole eggs and 4 egg yolks,

1 teaspoon olive oil,

a pinch of salt.

HOW TO COOK:

Mixed these ingredients, wet, warm water, a clean white cloth and, having wrung out well, it wraps the dough and then leave to rest for about two hours. After this time, we reshuffle the compound and stretches with a rolling pin to obtain very thin layers. Without rest the dough for about ten minutes, sprinkling with a little corn flour, wrap around themselves in order to get a salami and a free hand, cut the "Tajarin" fine as hair. Place them wide open on a tray covered with a lightly floured towel and become dry a little.

HOW TO SERVE:

"Tajarin" is cooked in abundant salted boiling water for a few minutes (three to four minutes) and dress in different ways: sauce with roast beef, sauce game in Psalms', with a special sauce made with chicken livers and minced lean veal, embellished with white truffle butter and grana Padano.
