Veal roulade

INGREDIENTS FOR 6 PERSONS:
6 slices of leg of veal.
For the filling:
a handful of parsley
a yellow pepper
2 cloves garlic
1 red pepper
2 carrots
2 stalks of celery
an onion.
For the fried:
onion, carrot, a stalk of celery, a glass of white wine, a cup of broth, extra virgin olive oil, salt.
HOW TO COOK:
Take the vegetables (parsley, yellow bell pepper, garlic, red pepper, carrots, celery, onion) and minced with the mezzaluna knife. Lay well the meat slices and beat them: cover them with finely chopped vegetables and salt lightly. Wrap as a roulade and tie with kitchen string. In a pan, put chopped onion, carrot and celery, a bit of olive oil and a pinch of salt: heat and arrange roladine for cooking. Keep the meat on low heat for a light golden browning, add some white wine and broth and alternately turning often roladine. Serve hot covered with their juice.
