INGREDIENTS FOR 4 PERSONS:
4 steacks of calf,
4 balls of ground meat,
4 slices of liver,
6 pieces of sausage,
4 macaroons,
2 apples,
3 eggs,
breadcrumbs,
olive oil
For the meal: 200 grams of sugar, 125 grams of bran, a pint of milk, rind of a lemon.
HOW TO COOK:
Prepared before the meal. Bring to a boil the milk with sugar and grated lemon rind and add a rain semolina blended with the whip. Cook for five minutes, overturned into a mold and let cool for a day. Cut all the meat into slices and the meal cold lozenges. Flour the macaroons. Beat an egg, dip the macaroons meal and floured and pass them in the bread crumbs. Dip the meat in the other two beaten eggs and bread crumbs. Mix the last egg with minced meat, Parmesan cheese, pepper, formed into balls and bread them. Fry all ingredients in a cast iron pan with extra virgin olive oil boiling: first sweet, then salty. Take care to change oil every time. Separately, floured and fried liver sausage. Serve the stir-fry hot.
